Whipped Bone Marrow for Babies
- 2.2 lbs grass-fed beef marrow bones (yields approx. 5–7 oz marrow)
- 2 tablespoons extra-virgin olive oil
- Preheat oven to 375°F. This temperature is important as it keeps the EVOO from getting too hot while still fully roasting the marrow.
- Place the marrow bones cut side up on a rimmed baking sheet. Roast at 375°F for 20-25 minutes, until the marrow is soft, jiggly, and just beginning to pull away from the bone.
- Scoop all the roasted marrow out of the bones into a small bowl. Drizzle with 1 tbsp extra-virgin olive oil (EVOO) and whip together with a fork until smooth and creamy.
- Serve as-is, spread on a soft food, or mixed into an iron-rich food like minced beef liver, ground beef or lamb, or mashed sardines. Serve at room temperature or slightly warm.
- Age appropriateness: Suitable for babies 6 months and up who have started solids.
- On fat for babies: Babies need approximately half their daily calories from fat. Bone marrow is almost entirely fat, making it an excellent and bioavailable source. The EVOO also improves absorption of fat-soluble vitamins (A, D, E, and K).
- On iron: Bone marrow is NOT a significant source of iron, despite common misconceptions. Babies 6-12 months have the highest iron needs of any age group, so bone marrow is best used as a vehicle for iron-rich foods. Great mix-ins include minced beef liver, ground beef or lamb, or sardines.
- On breastfeeding: If breastfeeding, prioritizing iron-rich mix-ins is especially important, as breast milk is lower in iron than iron-fortified formula.
- Sourcing: Grass-fed bones are worth seeking out look for them at butcher shops, farmers markets, or well-stocked grocery stores. Ask for canoe-cut (split lengthwise) for easy scooping.
- Storage: Refrigerate for up to 2 days or freeze in small portions for up to 1 month.
Micronutrient Highlights
Bone marrow is modest in variety but very high-impact in what it does deliver, specifically fat-soluble vitamins like A, D, E, and K, all of which are better absorbed thanks to the EVOO.
Cholesterol is also worth calling out here as a hero, not a villain. It's essential for infant brain and nervous system development. Oleic acid (the same heart-healthy monounsaturated fat in olive oil) is the dominant fat in marrow. Zinc and phosphorus round it out for bone and immune support.
