Marry Me Chicken Mac and Cheese

Marry Me Chicken Mac and Cheese

Marry Me Chicken Mac and Cheese

  • 2 tbsp olive oil (from the sun-dried tomato jar if possible)
  • 1 cup sun-dried tomatoes (cut into strips)
  • 1 tbsp tomato paste
  • 4 cloves garlic (minced)
  • 1 tsp paprika
  • 1 tsp herbes de Provence
  • ½ tsp red pepper flake
  • 4 cups chicken bone broth (I use Kettle and Fire)
  • 1 lb pasta
  • 1 ½ lbs chicken breast (fat trimmed, cut into bite-sized pieces)
  • ½ tsp baking soda
  • 1 ½ cup evaporated milk
  • 2 oz parmigiano reggiano (freshly grated)
  • 8 oz gruyere (freshly grated)
  • 2 oz goat cheese (soft)
  • ½ cup fresh basil
  • ¼ cup fresh oregano
  1. Cook the sun-dried tomatoes and aromatics. To a large skillet over medium low heat, add a tbsp of the olive oil, then add the sun-dried tomatoes and cook until lightly browned and caramelized. Add the tomato paste and cook for another minute, then add the garlic, paprika, herbes de Provence and red pepper flake and cook for a minute more.
  2. Cook the pasta. Add the bone broth to the pot and bring to a boil, then add the pasta and cook, stirring occasionally, until the pasta is a couple minutes shy of al dente. If the bone broth is almost gone and the pasta needs longer to cook, just add some more broth or water.
  3. While the pasta is cooking, prep the chicken. Add the cut chicken to a bowl with the baking soda, a big pinch of salt and a splash of water and massage till the baking soda is coating all of the chicken evenly. Let sit for 10-15 minutes, but no longer. If it sits too long, the chicken will get spongey.
  4. Finish the mac. Add the evaporated milk to the pot with the pasta and stir. Let the pasta finish cooking in the evaporated milk, then turn off the heat and add the cheeses. Stir until the cheeses are completely melted and incorporated, then add the fresh herbs, reserving some for the top to garnish.
  5. Enjoy!
  • I used a pasta with a cook time of around 11-13 minutes. If you’re using a pasta with a short cook time (around 6 minutes), use ½ cup evaporated milk or half & half at a time till it’s cooked to your desired doneness and is the consistency you like.
