Green Goddess Chicken Salad

- 1 rotisserie chicken (meat only, roughly shredded)
- 1 cup or so mayo (I like Kewpie)
- 1 small head of green cabbage (any damaged outer leaves and core removed, roughly chopped)
- 4 large stalks celery (with leaves, roughly chopped)
- 1 bunch scallions (whites only, roughly chopped)
- 1 bunch parsley (most stems removed)
- 1 package fresh chives (~ ½ oz)
- 2 large sprigs fresh tarragon leaves
- 4 cloves garlic
- 1 tbsp anchovy paste
- Zest of 2 lemons
- Juice of 1 lemon
To Serve
- Baby gem lettuce leaves
- Firehook Crackers
- Fresh chives (minced)
- Shred the chicken. To a stand mixer affixed with a paddle attachment, add the chicken meat. Turn on medium low until finely shredded. You can do this by hand as well. Transfer to a large mixing bowl.
- Mince the veg. To a food processor, add the roughly chopped celery and scallion whites, along with the fresh herbs and garlic cloves. Pulse until finely minced, then transfer to a cheese cloth or heavy duty paper towel and wring out the excess moisture. Transfer to the bowl with the chicken. Add the roughly chopped cabbage to the food processor and pulse until small and uniform, then add the cabbage to the bowl with the chicken and herb mixture.
- Finish mixing the chicken salad. Add the mayo, anchovy paste, lemon juice and zest, a big pinch of kosher salt and lots of freshly cracked black pepper to a small bowl and whisk to combine, then add to the mixing bowl and mix it all together. It’s especially easy to use your hands for this! If it’s too dry, add more mayo. Taste and add more salt and pepper if needed.
- Serve on baby gem lettuce leaves (for some mini lettuce wrap action) or on Firehook crackers topped with minced chives!
- Nutrition calculated using 2 lbs rotisserie chicken meat (white and dark) and 1 cup of Kewpie mayo.
- If you have a smaller chicken, start with less mayo. You can always add more! You can start with less of the other ingredients too, but IMO more is more there.
- Nutrition does not include serving ingredients.
