Elphaba’s Green Pasta

Elphaba’s Green Pasta

Elphaba’s Green Pasta

Green Sauce

  • 1 cup fresh basil
  • 2 cups fresh spinach
  • 5 oz cottage cheese (whole milk, one single serve Good Culture)
  • 1 oz parmesan (freshly grated)
  • 3 stalks green onion (greens and whites, roughly chopped)
  • 3 cloves garlic (minced)
  • 1 lemon (juice, ~ 2 tbsp)
  • ½ avocado (~ ½ cup)
  • 1 tbsp EVOO
  • Kosher salt (to taste)

Black Garlic Gremolata

  • 2 tbsp black garlic (minced)
  • ¼ cup fresh parsley (chopped)
  • ¼ cup crushed black chips (or black breadcrumbs)

The Rest

  • 1 lb pasta of choice
  1. Make the gremolata. To a small bowl, add all ingredients under “black garlic gremolata” and toss. Set aside.
  2. Blend your sauce and cook the pasta. Add all ingredients under “green sauce” to a blender and puree until combined and as smooth as possible. It won’t get super smooth quite yet – that’s ok, it will. Cook your pasta in well salted water (should taste well seasoned, like soup) until al dente, then reserve 1-2 cups of pasta water and drain, then return the pasta to the pot it cooked in. Add ½ cup pasta water to the blender with the sauce and puree until creamy and smooth, then pour over the pasta and toss, adding more pasta water till it’s the consistency you like. If you want, you can turn the heat on low to warm the sauce through as well.
  3. Plate and serve. Serve the pasta with some black garlic gremolata on top and enjoy!
  • The black chips are really seasonal, and you might not be able to find them. You can just use a pringle-type chip (that’s what I used), or if you want it to stay black, you can saute some panko breadcrumbs with olive oil, squid ink or activated charcoal, and a pinch of salt to create a black crumb.
  • The gremolata was created as a cheeky way to pay homage to Elphaba’s character, but honestly, the pasta and sauce are really great on their own! Choose your own adventure.
  • Nutrition includes 10 original crisps from The Good Crisp Company.
  • If you want to add more protein, add more cottage cheese, or even some (unflavored, unsweetened) collagen peptides!
