Cinnamon Toast Crunch PB Banana Sandwich
- 4 slices soft white bread (milk bread preferred)
- 1/4 cup salted butter (softened)
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1 pinch salt
- 4 tbsp peanut butter
- 2 tbsp salted caramel sauce (I used Coop's but you can also make your own)
- 2 medium bananas (sliced lengthwise and cut in half)
- Milk bread (shokupan) is the move. Its slight sweetness and pillowy texture take this over the top. Any soft white sandwich bread works great too. Avoid anything too crusty or dense.
- Don't walk away from the broiler! It goes from golden to burnt fast. A little char on the edges is genuinely good here. The bitterness cuts through the sweetness nicely.
- Optional add-ons: Crispy bacon would be an excellent addition. The salty, smoky crunch against the sweet caramel and banana is a legitimately great combo. Highly encouraged.
- Store-bought salted caramel works perfectly. If making your own, a salted version is non-negotiable here.
Micronutrient Highlights
Honestly this one isn't trying to be a health food, but there are a few genuine standouts: potassium and B6 from the banana, niacin and vitamin E from the peanut butter, and calcium and phosphorus from the milk bread if you go that route.
