Caesar Chicken Salad

Caesar Chicken Salad

Caesar Chicken Salad

  • 1 whole rotisserie chicken (shredded)
  • 1/2 cup Caesar dressing (plus more to taste)
  • 1/2 cup Kewpie or Duke's mayo (plus more to taste)
  • ½ small head green cabbage (cored)
  • 1 shallot (roughly chopped)
  • salt and lots of black pepper (to taste)
  • Parmesan block (for freshly grating over top)
  • Crackers (garlic & thyme recommended, I used Firehook, for serving)
  1. Pull all the meat off the rotisserie chicken and finely shred. The easiest method is a stand mixer with the paddle attachment. It makes quick, even work of it. A hand mixer works too, or just use your hands.
  2. Add the roughly chopped shallot to a food processor and pulse until finely minced. You can do this by hand, but the food processor is faster and more uniform.
  3. Add the roughly chopped cabbage to the food processor and pulse until broken down into small, somewhat uniform pieces. Aim for roughly the same size as the shredded chicken. Don't over-process.
  4. In a large bowl, combine the shredded chicken, cabbage and shallot mixture, Caesar dressing, and mayo. Start with ½ cup of each. The right total amount will vary depending on the size of your chicken. Stir until well combined.
  5. Add more mayo and Caesar dressing as needed until the salad is super creamy and cohesive. Season generously with salt and a lot of black pepper, don't be shy.
  6. Plate with crackers, a heavy shower of freshly grated Parmesan, and an extra crack of black pepper on top.
  • Chicken size varies, so always start with ½/ cup each of mayo and dressing, then build up until it's visibly creamy, not just lightly coated.
  • Pulse, don't purée the cabbage. You want small, distinct pieces that match the texture of the shredded chicken.
  • Kewpie (Japanese mayo) is richer and slightly tangier than mayo, the top pick here. Duke's is a great American alternative, or use your favorite!
  • A bold homemade Caesar Dressing is ideal. The dressing carries most of the flavor, so use one you love.
  • This keeps well in the fridge and arguably gets better as it sits.
  • Nutrition facts are based on using Kewpie mayo and Firehook Garlic & Thyme crackers.
