## Matcha Dalgona Charcoal Latte

#### Matcha Dalgona

- 1 tbsp matcha
- 2 tbsp hot water
- 1 egg white (room temp)
- Few drops of lemon juice
- 2 tbsp sugar

#### The Rest

- 2 cups whole milk
- ½ tsp activated charcoal
1. **Bloom the matcha**. In a small bowl, whisk together the matcha and hot water until smooth and no clumps remain
2. **Make the dalgona**. To a medium clean, dry bowl, add the egg white and a few drops of lemon juice. Super important for there to not be any egg yolk in the white, or any fat residue at all on the bowl, otherwise it won’t whip properly. Whip the egg whites using a whisk or electric mixer until soft peaks form, then slowly add sugar while whipping until thick and glossy. Add the bloomed matcha and whip until just combined. Don’t overwhip!
3. **Construct your lattes**. Fill two glasses with a cup of milk and ¼ tsp activated charcoal each, then add ice until there’s about 1” of space or so left at the top of the glass. Dollop the matcha dalgona on top of each glass, then serve with straws immediately!
- A lot of people mix the dalgona into the milk right away and drink it all mixed together, but you can leave it separate too! Take a little sip, a little bit of dalgona after – so good! Really, it’s good either way though. :)
- The latte in the photo has more activated charcoal than the recipe calls for, so don’t expect a super dark color. Adding more can affect nutrient absorption.
