## Ingredients

- 9 slices thick cut bacon
- 2 tbsp butter
- 2 tbsp flour
- 2 cups whole milk (warmed)
- 8 oz sharp cheddar cheese (grated fresh)
- 24 oz potato gnocchi
- salt + pepper (to taste)

### To Serve

- 2 oz chives (chopped)
- 3 cups whole milk Greek yogurt (divided)

## Directions

1. Start the bacon. Lay the bacon slices onto a parchment lined baking sheet so they’re not touching, then put into a cold oven and turn to 400F. When the bacon is cooked to your liking, remove from the oven and transfer to a paper towel-lined plate. It will crisp up as it cools. While the bacon is cooking, make the gnocchi and cheese.
2. Make the cheese sauce. Start bringing a pot of water to a boil for the gnocchi, then start the sauce. Melt the butter in a large saute pan over medium heat, then whisk in the flour and cook for 2 minutes, whisking constantly. Slowly add the milk while whisking. Bring to a simmer, whisking frequently. The mixture should thicken and coat the back of a spoon. Turn off the heat and add the cheese a little at a time until fully incorporated. Season with salt and pepper to taste.
3. Finish the gnocchi and cheese. Cook the gnocchi in liberally salted water according to package instructions, then reserve some pasta water and drain. Add the gnocchi into the cheese sauce and toss, adding pasta water to thin the sauce to the consistency you like.
4. Finish. Chop the bacon into bits, then add half to the gnocchi and cheese and stir. Top with the remaining bacon bits, a heaping scoop (or two) of Greek yogurt, and a healthy sprinkling of chopped chives and enjoy immediately!

## Notes

- Time to cook the bacon can vary quite a bit. The total shown includes a 25 minute cooking time for just the bacon, but the range can generally be anywhere from 18-30 minutes. Keep an eye on it and bake to your preferred crispness.
- Pro Tip: Start making the sauce about 10 minutes before your bacon is done to save a little time!
