## Buffalo Chicken Salad

- 2 1/2 lb boneless skinless chicken breasts or thighs (cooked)
- 8 oz cream cheese (softened to room temperature)
- 1/4 cup Kewpie mayo
- 1/4 cup Frank's RedHot sauce
- 3 celery stalks
- 1 shallot
- 4 garlic cloves
- 1 cup dill pickle slices (for serving)
- 1/2 cup blue cheese crumbles (for serving)
- Crackers (for serving)
1. Cook boneless skinless chicken breasts or thighs, cooked by boiling, baking, or using a rotisserie. Let cool slightly, then cut or tear into large pieces. Rotisserie chicken works great as a shortcut here.
2. Add the cooked chicken to a stand mixer fitted with the paddle attachment. Mix on medium speed for 30-60 seconds until the chicken is broken down into a shredded, even texture. Don't over mix! You want texture, not paste.
3. With the mixer on low, add cream cheese, softened to room temperature, Kewpie mayo, and Frank's RedHot sauce. Increase to medium and mix until fully combined and creamy. Taste and adjust hot sauce as needed.
4. Add celery stalks, shallot, and garlic cloves to a food processor. Pulse 8-10 times until finely minced but not pureed. You want small pieces, not mush.
5. Fold the processed celery mixture into the chicken mixture until evenly distributed. Transfer to an airtight container and refrigerate.
6. Serve with dill pickle slices, blue cheese crumbles, and crackers. Pile the salad on a cracker, top with a pickle slice and a pinch of blue cheese for the full experience.
- Kewpie mayo is richer and more umami forward than regular mayo due to egg yolks and a touch of MSG. You can swap for regular mayo if you must.
- Cream cheese should be fully softened before mixing or it won't incorporate smoothly.
- Don't over process the celery mixture. A few pulses gives you fine texture without turning it into liquid.
- Frank's RedHot is the move here specifically. It's vinegar forward and thinner than most hot sauces, which keeps the salad from getting too thick.
- This salad improves overnight as the flavors meld. It's a great make-ahead option.
